Each time a new batch of beer matures, there's the struggle:
Do I show patience, and see what my latest brew matures into? Or do I start pouring and give it out right away?
These are the difficult questions I face in life, to pour myself a beer tonight or two weeks from now. As I write, the first taste-test of the black IPA is a success. One week after bottling, it's already definitely carbonated enough, and sharp with just a hint of dark to it.
But is it refined enough? It's certainly still a more raw beer, and IPAs are among those nice styles that know how to age properly in a bottle. Something great today could turn into something fantastic tomorrow.
I'd better try another.
